Today’s Recipes. Spicy Mango Salsa With Tortilla Lime Chips
Salsa goes great with grilled shrimp, chicken, pork , jerk chicken wings or just about any type of meat. It is also great served with tortilla chips.

Serve 6
Ingredients:
1/4 cup canola oil
1 small shallot or ½ of medium red onion, finely diced
1 medium red bell pepper, cut and diced
2 mangos (peeled, seeded and chopped)
1/4 cup chopped fresh cilantro
1 habanero (or 1 to 2 jalapeños) seeded, and very finely diced 2 tablespoons lime juice
1 tablespoon lemon juice
Kosher salt

Cooking Instructions:
Step 1:Heat the oil in a medium skillet over medium-high heat until simmering. Add the onion and red pepper, sprinkle with 1 tsp. salt, and cook, stirring, until the vegetables just start to brown and soften a bit
Step 2: Transfer to a large plate to cool. Once cool, transfer to a medium bowl and toss with the mangos, cilantro, habanero, lemon and lime juice.
Cover, refrigerate and allow to sit at least 30 minutes before serving.
