Ginger Salmon
Ingredients

1 pound of salmon fillets
1 teaspoon of garlic paste
1 tablespoon of ginger paste
1/3 cup of low-sodium soy sauce
2 tablespoons of olive oil
2 carrots, chopped
1 small shallot
2 cloves of garlic
1 tablespoon of rice vinegar
Directions

1) Lightly sprinkle salmon with salt, then rub salmon with garlic paste and ginger paste.
2) Place fish and marinade into a resalable plastic bag, seal, and refrigerate for at least 2 hours.
3) Place into a small saucepan, set over medium heat, pour olive oil, then sauté the garlic and the shallot.
4) Add the carrot, then the soy sauce and rice wine vinegar.
5) Bring to a gentle simmer, stirring constantly until the liquid is reduces.
6) Place salmon in a pan then bake for 20 minutes.
7) Brush salmon fillets evenly with the olive oil mixture.
8) Place in a medium baking dish.
9) Bake for 15 to 20 minutes in the preheated oven, until the fish flakes easily with a fork.
